My kids, like your wife, are part of the resistance. Fear often drives those who want to slam on the brakes, but fear should never be in the driver's seat. Having said that, I sympathize with the many concerns that constantly bubble up. An uncertain future is fertile ground for fear, and that is the era we are living through. I feel the fear myself, even still, I inch forward into this mind-blowing new world, questioning, evaluating, and wrestling as I go. Which sounds pretty much like what you are doing.

While nobody will listen to me, I'm of the opinion that much of Generative AI should be left in the hands of specialists/experts. The general usage is nonsensical and wasteful. Just as I can't just go and fly an airplane without proper training, or cut a human open for surgery, we should limit AI to specific fields and usages.
Yeah, I think, like any new toy, there is an infatuation period, and then, as you get used to it, understand it, and see what it's good for and what it isn't, you naturally cool off. There are tonnes of time-saving benefits for me in my line of work as a building administrator. As a research tool, AI is fantastic -- it's replaced "googling" for sure. When it comes to writing help, I've become a lot more picky. I'm learning how it helps me as a writer, and how it replaces me as a writer. -- I'm not sure what you mean about "leaving it in the hands of experts." In my experience, the general uses of AI I currently employ are not nonsensical or wasteful; on the contrary, they are extremely helpful.
Nonsensical (and wasteful): I'm thinking of people using AI to generate funny images or videos to share with friends. Wasteful: letting AI replace a typical web-search. Wasteful because of the massive resources it requires as a tech.
There are ways it can be extremely helpful to many fields. But again, my concern is whether the cost of resources is justifiable for wide-scale public usage, that often becomes more a hobby or exploration.
